Clay Niccum has always believed that the best moments in life deserve to be savored — and that the things we love most should also do the most good.

A lifelong coffee lover and dedicated baker, Clay grew up finding meaning in the rituals that bring people together: the joy of sharing fresh-baked treats, the quiet comfort of a perfectly brewed cup, the pause in an otherwise busy day that reminds you to be present. Those moments weren't just pleasures — they were purpose. And nothing captured that purpose quite like watching someone's face light up at the first bite of something truly delicious. That simple, genuine joy — the smile that a perfectly crafted sweet treat can bring — became the heartbeat behind everything Clay does.

That passion for baking led Clay to the National Bakery School in London, one of the world's most prestigious institutions for the craft, where he earned his PhD in Food Science with a focus on sustainability and gluten free baking. It was there that Clay's vision came into full focus: that indulgence should be accessible to everyone, that no one should have to compromise on joy because of dietary needs, and that the ingredients behind our favorite pleasures — from a gluten free pastry to an ethically sourced cup of coffee — should reflect the values we care about most.

Clay's Coffee was born from that belief.
